If hot food is being transported to the picnic it needs to maintain a temperature of 60C (140F) or above until serving. This can be difficult to do without proper equipment. - Moldy smell or not, that food should be thrown out covered or uncovered. Do not consume it. It has spent to much time at room temperature to be good to eat. As for the moldy odour, they develop with time and would come from splattering.

- If you can be sure that you soup has not been in the danger zone for more than 2 hours (danger zone: between 4 degrees C (40 degrees F) and 60 degrees C (140 degrees F)), it will be safe to eat. Otherwise, you may be at risk of food poisoning. Removing the chicken will not improve the safety of the soup. Once the soup was done, it should have been put in shallow containers to cool it down as soon as possible and put it in the refrigerator.
- I had an arguement at a family dinner in which I would not allow silverware to be left in a dish my fridge. I was told there is nothing wrong with that but I felt it was the same concept as leaving a metal can in the fridge. Is it harmful to eat food from the fridge after silverware was left in? - It would depend of the type of food and the time of storage. High acid foods such as tomato base foods, frutis etc... would have a tendency to reach with the metal as in a can for example, tarnishing it and make chemicals leach in the food. It is always preferable to store leftover foods in a plastic or glass containers.
- Tonight when I came home and I saw that my room mate had made pasta. When I looked in the cupboard, I saw that she had put the opened, uncooked jar of tomato sauce back in it. I told her you have to refrigerate tomato sauce after opening it. She then informed me that she had already opened it two weeks ago, and it had been sitting in the cupboard (open, uncooked), this whole time. I told her that I think the sauce is definitely bad now, but she said she feels fine. Should I expect a very sick room mate all night?
- There is possibility that your room mate could be sick. Although tomatoes are quite high in acid in nature, having an opened jar in the cupboard would accelerate the growth of microorganisms or even moulds. The latter can produce toxins that could make people sick. Furthermore some mould toxins are known to be carcinogenic. You do not mentioned if the jar was commercially prepared. If so, the sauce had to be cooked in the jar during processing. But once opened and exposed to air without refrigeration, it can make someone sick.

- No, absolutely not. Consuming this product could make yourself and your family at risk of food poisoning. The spaghetti sauce has spent to much time at room temperature, the danger zone allowing heat resistant spores to germinate, growth and produce toxins. Sorry, but you will have to throw it out.
